Sweetcorn Fritters

Get the children to grate the courgette, weigh the ingredients, measure the milk, crack the egg and mix it all together, then step in to be around for the hob.

Ingredients

Makes 6

You will need:
- 60g self-raising flour

- 1 teaspoon smoked paprika

- 220g sweetcorn

- 2 spring onions, trimmed and sliced

- ½ courgette, grated

- 3 tablespoons milk (dairy or non-dairy)

- 40g feta cheese

- 1 free-range egg

- freshly ground black pepper

Method

STEP 1. Put the flour, sweetcorn, spring onions, courgette, smoked paprika and milk into a bowl.

STEP 2. Crack an egg into a separate bowl and beat with a fork. Tip into the big bowl with all the other ingredients and mix everything together.

STEP 3. Measure 1 tablespoon olive oil into a frying pan, dollop a large spoon of the mixture into the frying pan, add another. Fry for a few minutes, turn over and cook for another 3-4 minutes until golden.

STEP 4. Repeat with another 2 spoonfuls and repeat again, until you have 6 fritters. Eat with a little sweet chilli sauce or mango chutney and if you have a lemon or lime, squeeze a little over the top.
